Homemade Bread





Is there anything more appealing than the smell of fresh-baked bread? However the idea of kneading bread for hours does nothing for me. Until I discovered this recipe for "Kneadless Bread"! This loaf is perfect for dipping in olive oil and can be made with either whole wheat or
white flour (or any combination thereof). Takes at least 15 hours to make, but only about 10 minutes of effort.

Combine:
3 cups of flour
1/4 tsp yeast
1 1/2 tsp salt
1 cup, 1/2 cup, and 2 Tbl water

Mix with a wooden spoon. Cover with plastic wrap. Leave 12-24 hours.
Place on flour. Fold twice. Cover again with plastic wrap. Leave 15 minutes.
Shape, four and place in dish cloth. Leave 1 1/2 hours (2 hours total).

Preheat oven to 450 degrees. Heat dutch oven with lid on in preheating oven for 30 minutes (while the dough continues to rise)
Place dough, seam up in the hot dutch oven (sprinkle some flour on the dough for looks). Replace lid on pot and bake 30 minutes at 450 degrees.
