Swedish Raspberry Almond Bars Recipe

Perfect for breakfast, lunch, or dinner, these bars are sweet enough for kids and elegant enough for your husband to take to his co-workers!
Swedish Raspberry Almond Bars

3/4 cup butter
3/4 cup powdered sugar
1 1/2 cups flour

3/4 cup raspberry jam

3 egg whites
6 Tbl sugar
1/2 cup coconut
1 cup of sliced almonds, divided

Mix first three ingredients and spread in greased 7x11 or 9x13 pan. Bake 350 degrees for 18-20 minutes or until golden brown.
Meanwhile, beat 3 egg whites until soft peaks form. Then beat in 6 Tbl sugar till stiff peaks form. Fold in 1/2 cup coconut and 1/2 cup almonds. When crust is done, immediately spread raspberry jam over crust. Then spread the egg/sugar/coconut
mixture over the top. Sprinkle 1/2 cup of sliced almonds over the whole thing. Bake the 3 layers at 350 degrees for 18-22 minutes.
The finished product! Yum!
